Lignum – Bringing an ancient way of cooking back into the modern world

Lignum is the Latin for wood and the name of a new and unique restaurant which is set to open in Bullaun – 6kms from Loughrea, very soon.

The overall goal of this restaurant is to bring an ancient way of cooking back into the modern world. Located in the idyllic & tranquil setting of Bullaun, Galway, local produce is blended with international experience which has been carefully acquired from around the world, to bring customers the ultimate culinary experience.

Each dish’s ingredients are procured meticulously from the immediate vicinity, and from top producers across Ireland. This selection process revolves around one central theme – real, wholesome & natural food, with the belief that this is the constitution of what good food should be.

The emphasis placed on the ingredients is complemented by the fantastic team of chefs, who have worked in multiple Michelin Star restaurants worldwide, and whom the owners have spent an incredible amount of resources bringing together. Crafted using ancient methods focused on using wood to prepare, cook & serve the cuisine – Lignum will offer an experience like no other that transcends the general outlook on modern dining.
