A taste of Texas smoked and Served to the Irish Shores

Brisket Boss is a family run, Galway based mobile catering company focusing on the authentic low and slow Texan style of cooking, with all their offerings slow smoked over dried olive and apple wood.
In early 2018 Liam, a classically trained chef with over 14 years of experience in the industry and his wife Deirdre travelled to Houston Texas to learn everything there is to know about the infamous Texan style of cooking. Here Liam achieved certification as a BBQ Pitmaster. On return to Galway they set about bringing this style of cuisine to Ireland.
They use an eye catching 2.5 tonne, 6 ft barbeque rig which features a charcoal grill in addition to dual barrel smoking chambers to cook all their food onsite. The slow smoking style of cooking results in real authentic Texan BBQ while the slow cook results in meats that are melt in the mouth tender with a unique smoky flavour imparted from the dried woods.
You can expect to find everything from their signature dish and namesake, Brisket, to pulled pork, St Louis style sticky rib, red hot smoky chicken wings to chargrilled then smoked beef burgers. Vegetarian and vegan options are available including the very popular pulled BBQ Jackfruit. All rub and sauce blends are created and made in house.
